DirectionsStep 1. Whisk together all your dry ingredients. All of them...plop them on in there and whisk. Step 2. Beat together your butter, brown sugar, and egg until everything is completely incorporated. Step 6. Preheat your oven to 375 degrees F and get your pans all nice and greased! Step 8. Bake one pan at a time for 7-10 minutes. Step 11. Decorate your cookies however the heck you want! And there you go! Awesome gingerbread cookies that don't have to exclusively be for Christmas time! I really don't think I had ever had a gingerbread cookie before this (I know...crazy) but they turned out to be this really warm, savory taste that I absolutely loved. I 100% understand why these cookies are so popular and I'm proud to say that I have hopped on the gingerbread train. CHOO CHOO!

I know I could have made two separate posts about these two different cakes, but I made them at the same time, so I thought I would just put them into the same post. Two of my cousins graduated this year, so I wanted to surprise them at Christmas with a little Congrats cake! I decided to make two, three tiered mini cakes; one Oreo and one Mock Strawberry Shortcake. I used the smallest, top tier cake pan from the Wilton Perfect Performance Round Cake Set for all of the tiers. It was a bit time consuming, but they were all the same size, so it worked out great!
